Dump the following ingredients in the crockpot and cook on low for 6 to 8 hours or on high for 4 to 6 hours. Length of time will be determined by your chicken; cooked or uncooked.
3 Cups Chicken Broth
3 Cups Chicken, cooked or uncooked
1 Cup quinoa, rinsed
1 quart of stewed tomatoes
1 can diced tomatoes with green chilies
1 can corn, drained
2 cans black beans, drained
1 tsp Salt
1/2 tsp red pepper flakes
1 Tbsp garlic
1 tsp cumin
1 tsp chili powder
1 tsp onion powder
Serve with Cheddar or Monterey Jack cheese and Sour Cream
