We love butter fried beats; Katya (5) and David (3) ate them like candy!
Cut away the stems, leaving about 3 inches and put them in boiling water and let simmer for about 1 hour. This will make it easier to peal the skin and for slicing and of course less time in the fry pan.
Remove the beats from the hot water and put in cold water and then peal them. Slice them about 1/4 inch think or whatever you like and fry them in butter or olive oil, a little of both is good. I also sprinkle them with garlic salt on just one side.
They have the most gorgeous color, way better in person; I just love the rings and everything about them!
